Roasted Peppers, Onions & Mushrooms
This is a favorite side dish of mine! You can add or substitute veggies to your liking:
For these pictures, I used 3 bell peppers (orange, red or combination of the two), 1 sweet onion, chopped & 1-2 packages mushrooms of choice (I typically use crimini & portabello) per tray.
Chop, place on baking sheet, drizzle with olive oil & sea salt & bake in 450 degree over for 30-40 minutes. For crispier veggies, bake 25-30 minutes & then broil for just a few minutes.
