Crockpot Vanilla Cinnamon Baked Apples
A delicious & healthful substitute for apple pie that smells delicious as it simmers in the crock pot...
Ingredients:
8-10 large apples of your choice (I used Fuji), sliced; peeled or unpeeled
2 tsp. cinnamon
2 tsp. vanilla paste or extract
Juice of 1/2 lemon
1/4 cup brown sugar
1/4-1/2 cup apple cider
Place all ingredients in crockpot & cook on low for 5-6 hours or high for about 4 hours - the longer they cook, the softer the apples. Serve warm with a little vanilla ice cream & crushed walnuts!
