Cheesy Turkey Skillet - 2 Ways
For those of you that have to modify dishes for the other members of your household, this recipe makes it is easy to do just that...
Ingredients:
1-2 lbs. lean ground turkey
1-2 tbsp olive or coconut oil
1 onion, diced
1-2 cloves garlic (or 1-2 tsp minced garlic)
1 cup zucchini/squash
1 sliced bell pepper
1/2 eggplant, diced
1 cup sliced mushrooms
1-2 small potatoes or sweet potatoes (with skin), diced & cooked
10-20 grape tomatoes, halved
1 cup shredded mozzarella cheese
1 cup chopped or diced tomatoes in sauce (I use Pom which comes in cardboard box)
Himalayan/sea salt, basil, oregano to taste
Directions:
Preheat oven to broil. In skillet, heat oil & brown garlic and onion. Remove and transfer to covered bowl or dish. Add ground turkey, along with the spices & continue to stir & chop up meat until just cooked through. Transfer half the mixture, along with half of the onions & potatoes to a baking dish. Sprinkle with 1/2 cup of cheese & bake until cheese is bubbly. On stove, add potatoes & onions to remaining turkey in the skillet, along with the other chopped vegetables. Cook for a couple of minutes & then add the sauce. When everything is cooked through, transfer to a baking dish, add remaining cheese & broil until cheese is bubbling.
NOTE: you will need to drain the liquid from the turkey in skillet once or twice - otherwise the dish will be too runny!
